1. Preheat Belgian waffle iron. In a mixing bowl, add eggs, yogurt, olive oil, sugar and vanilla, stir until blended. 2. Sift together the dry ingredients. Add to the wet ingredients; stir until smooth. Add 2 tablespoons milk if needed. Brush waffle iron lightly with olive oil. Fill iron two thirds full (1/3 to 1/2 cup). 3. Cook waffles until crisp and golden about 2 minutes. Repeat with remaining batter, brushing the surface with olive oil before pouring in batter. Serve with Pure Maple Syrup, low fat ricotta and strawberries (or fruit of your choice).
