Vegetable Salsa
Ingredients:

1 Tbsp. fresh lemon juice
2 Tbsp. COLAIVTA EXTRA VIRGIN OLIVE OIL
1/2 red bell peppers, diced
1/2 green bell peppers, diced
1 cucumber, peeled, seeded and diced
1 medium red onion, diced
1 green onion, chopped
1 tsp. Johnny Ciao's BarBQ Blues (or 1/2 tsp. paprika and 1/2 tsp. chile powder)


Preparation:


Whisk lemon juice and olive oil together in a medium bowl. Add remaining ingredients and toss to combine. Serve with tortillas or as an accompaniment to other dishes. Makes 3 cups
