Spanish Rice
"This rice dish is a meal itself, but it can also jazz up a simple fish or chicken dish."
Ingredients:

1 cup long-grain white rice
3 tablespoons COLAVITA Extra Virgin Olive Oil
1 pound lean ground beef
1/2 large onion, chopped
1 clove garlic, minced
1/2 green bell pepper, chopped
3 cups stewed tomatoes
1 teaspoon Johnny Ciao's Opera Mix (or 1/2 teaspoon dry basil and 1/2 teaspoon dry oregano)
2 teaspoons chili powder


Preparation:


1. Rinse rice well under cold running water, drain and allow to dry thoroughly.
2. Heat oil in a heavy skillet over medium heat. Add rice and cook 5 minutes. Add beef, onion, garlic and bell pepper. Cook until beef is browned, stirring to break up beef. Add tomatoes, along with their juice, Johnny Ciao's Opera Mix and chili powder. Reduce heat to low, cover and cook 30 minutes, stirring occasionally, or until rice is tender and liquid is absorbed. Add water if needed to finish cooking rice. Let stand 5 minutes before serving.
