Melt butter with olive oil in a large skillet over medium heat. Add juniper berries and onions, cover, and cook about 8 minutes, stirring occasionally, or until onions are soft. Add a little water if onions are too dry. Add brown sugar and cook, stirring, about 5 minutes or until caramelized. Add cognac; heat until hot and carefully ignite. Let burn until flames burn out. Pour onions over an entree, or eat as a side dish.Makes 4 to 6 servings
