Penne with Tomato and Fresh Mushroom Sauce

Simple and tasty.  Add a salad and some crusty Italian bread, and dinner is made!

Ingredients:

1 tablespoon COLAVITA Extra Virgin Olive Oil
1 pound mushrooms, halved
1 (16 - ounce) jar COLAVITA Marinara Sauce
1 pound COLAVITA Penne or Ziti pasta, cooked according to package directions
1/2 cup chopped fresh basil
4 tablespoons grated Parmesan cheese


Preparation:


In a medium saucepan, heat the oil over medium heat; add the mushrooms and saute for about 5 minutes.  Pour in marinara sauce; reduce heat to low; cover and simmer for 10 minutes.  Stir in basil.  Spoon sauce over pasta in a large wide bowl, sprinkle with Parmesan and serve.
