Sizzlin' Tex-Mex Taco Bake
Ingredients:

1 (10 ounce) package frozen chopped spinach
4 cloves garlic, chopped
1/4 cup COLAVITA Extra Virgin Olive Oil
1 large egg, beaten
1/2 teaspoon salt
6 six inch flour tortillas
6 ounces sliced deli -seasoned turkey, salsa flavored if available
4 slices provolone cheese (4 ounces)
6 ounces roasted red pepper, cut into strips


Preparation:


Cook spinach according to package directions; drain well - squeezing out all the water. In a medium saucepan saute garlic in the olive oil. Add drained spinach, egg and salt. Stir quickly until egg is cooked. Lay tortillas on flat surface. Place turkey slices on each tortilla; spoon spinach mixture on top; roll up. Place in 10 x 2 x 2 inch baking dish, seam side down. Top with cheese slices and red peppers.  Bake uncovered in preheated 400 degree F oven for 15 minutes. Serve with salsa.  Serves 4-6.
