1. Bring 2 cups water to a boil in a small saucepan; stir in the raisins and oatmeal; reduce heat and simmer for 3 minutes. Let cool - set aside. 2. In a large mixing bowl, combine the flour(s), oat bran, cocoa powder, baking soda, cinnamon and nutmeg. Stir to combine. Mix in the applesauce, olive oil, eggs, honey and cooked raisin-oatmeal mixture; stir until well mixed.3. Spoon the dough into a muffin pan that has been oiled with a small amount of olive oil; bake at 400 degrees for 18 minutes or until a toothpick inserted into the center comes out clean.
