Hawaiian Tea Bread
"Although the inspiration for this recipe was a trip to Hawaii, the 'touch of the Mediterranean' is a delicious addition to this moist tea bread".
Ingredients:

2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup of COLAVITA Extra Virgin Olive Oil
1 teaspoon vanilla extract
1 1/2 cups granulated sugar
2 cups grated carrot
3 eggs, lightly beaten
1/2 cup golden raisins
1/2 cup unsalted macadamia nuts
1/2 cup flaked coconut


Preparation:


1. In a large bowl, stir together the flour, salt, soda, cinnamon and nutmeg. Make a well in the center; add the olive oil, vanilla, nuts, eggs, sugar, carrots, raisins, macadamia nuts and coconut; mix until well-blended. 3. Coat two loaf pans lightly with olive oil; pour in batter; allow to stand 20 minutes before baking. 4. Bake in 350 degree F oven for about 1 hour. Cool before slicing. Makes 2 loaves.
