Vegetables, Tempura Style
Serve these tasty fried vegetables with Sweet and Sour Sauce
Ingredients:


For the Batter
2 eggs
1 1/3 cups flour
1 teaspoon salt
1 cup flat beer

For the Vegetables
Get a nice mix of: zucchini, mushrooms, string beans, broccoli, cauliflower, carrots, sweet potatoes, asparagus, trimmed and cut into bite-sized pieces

Preparation:


Beat the eggs and mix in 1/3 cup flour and the salt. Add the beer alternately with the remaining 1 cup flour, beating continually. The batter should be thin so that it runs off a spoon easily. Let the batter stand at room temperature for about 1 hour.

Heat the oil to 375 degrees. Dip the vegetable pieces into the batter and let extra batter drip off. Using tongs, fry the vegetables in small batches, and drain on paper towels.  Makes enough batter to coat approximately 48 bite-sized pieces.
