Preheat the oven to 350 degrees.Lay onion and green pepper in a well-buttered 8 inch square baking pan. Sprinkle the paprika on the vegetables, and top with the cheese. Pour the beaten eggs over all. Bake in the oven for approximately 35 minutes, or until the eggs are set.When cool, cut into 1 1/2 inch squares. Turn each square upside down, garnish with the pimento strips, and serve. This may be baked ahead and reheated, or served at room temperature.Makes about 24 squares
