In a large saucepan, heat the oil over medium low heat, add the onion and garlic. Cover and sweat for about 10 minutes (do not brown). Add the remaining ingredients; simmer for 12 minutes or until tender. Puree in a blender or food processor. Cool in the refrigerator; bring to room temperature prior to serving. Serves 6 - 8
