A "Touch of Spring" Soup
This light spring soup is best at room temperature, a perfect first course.
Ingredients:

2 tablespoons COLAVITA Extra Virgin Olive Oil
1 medium onion, chopped
2 cloves garlic, minced
2 cups low-salt chicken stock
1 teaspoon curry powder
1 teaspoon prepared horseradish
1 bunch watercress (about 3 cups) washed and chopped
1 medium zucchini, diced
Salt and white pepper, to taste


Preparation:


In a large saucepan, heat the oil over medium low heat, add the onion and garlic.  Cover and sweat for about 10 minutes (do not brown).  Add the remaining ingredients; simmer for 12 minutes or until tender.  Puree in a blender or food processor.  Cool in the refrigerator; bring to room temperature prior to serving.  Serves 6 - 8
