1/4 cup dried mushrooms, preferably boletus 1 cup hot water 2 tablespoons COLAVITA Extra Virgin Olive Oil 1 small onion, peeled and diced fine 3/4 pound button mushrooms, cleaned, trimmed and sliced thin 1/4 cup dry white wine 2 cups meat or chicken broth 1/2 cups strained tomatoes (see Note) or tomato puree 1/4 cup coarsely chopped parsley leaves 1/4 cup coarsely chopped celery leaves Kosher salt and freshly ground black pepper, to taste
Preparation:
Place the dried mushrooms in a small heatproof bowl; pour the hot water over and allow to stand 10 minutes. Line a sieve with a double thickness of cheesecloth or paper towels; set over a bowl and drain the mushrooms, reserving the liquid. Rinse the mushrooms under cold running water to remove all sand and grit. Chop fine.
Heat the oil in a heavy 4 quart saucepan over medium heat. Add the onion and saute, stirring until light golden; about 10 minutes. Stir in the mushrooms (button and chopped) and saute, stirring occasionally until the mushrooms have rendered their liquid, about 10 minutes. Stir in the wine, simmer 2 minutes. Add the broth, reserved mushroom water, tomatoes, parsley, celery and salt and pepper to taste; simmer 5 minutes. Taste and adjust seasonings prior to serving. Note: Strained tomatoes, such as the Italian brand Pomi, are packed European-style in soft boxes. They have a fresh, rich tomato flavor without any unusual aftertaste. They may be found in most supermarkets.
