Washington Apple Bran Muffins
You can alter the flavor of these fiber rich bran muffins by using a different kind of yogurt. For delicious plain bran muffins, in a lower fat version, try a nonfat plain yogurt.
Ingredients:


1 cup whole wheat flour
1 cup all purpose flour
1 1/2 cups bran
1/4 cup wheat germ
1 1/2 teaspoons salt
1 1/2 teaspoons baking soda
2 cups apple cinnamon low fat yogurt
1/2 cup molasses
1/4 cup COLAVITA Extra Virgin Olive Oil
1/2 cup raisins
1/2 cup chopped nuts (optional)


Preparation:


Preheat oven to 350 degrees. Combine the flours, bran, wheat germ, salt, and soda; make a well in the center. In a separate bowl, mix the remaining ingredients (yogurt, molasses, oil, raisins, nuts). Pour the yogurt mixture into the dry mixture, and stir just enough to moisten. Spoon the batter into 12 oiled muffin tins. Bake for 18 minutes or until a tester comes out clean.
