Stuffed Italian Peppers
Italian frying peppers are sweet long peppers.  If you can't find them, you could use Anaheim peppers.
Origin: Italian
Ingredients:

12 Italian frying peppers
2 cups fresh bread crumbs (preferably made with Italian bread)
1/2 cup grated cheese
2 cloves garlic, chopped
Salt and freshly ground pepper, to taste
1/4 cup COLAVITA Extra Virgin Olive Oil, or as needed


Preparation:


Remove stem and seeds from peppers and set aside. Combine bread crumbs, cheese, salt, peppers and garlic. Add olive oil (enough to make stuffing). Stuff peppers with bread crumb mixture. Coat bottom of baking pan with a little olive oil and bake at 400 degrees for approximately 1/2 hour. Makes 6 servings
