Winter Parsley Pistachio Pesto
This tasty pesto is perfect on steaks, lamb, or chicken.

Ingredients:

2 cups fresh Italian parsley leaves
2 cloves garlic, chopped
1/3 cup toasted salted pistachios
1/3 cup COLAVITA Extra Virgin Olive Oil
4 tablespoons shredded Parmesan cheese
Juice of 1/2 lemon
Salt and freshly ground pepper, to taste


Preparation:


In a food processor combine the parsley, garlic and pistachios; using on/off pulses, pulse until mixture is well combined.  With the motor running, slowly pour in the olive oil; process until the mixture is smooth.  Add cheese and pulse to combine, the mixture should resemble coarse grainy mustard.  Spoon into a bowl, stir in the lemon juice and salt and pepper to taste.
