White Bean and Tomato Crostini with Fruttato

Ingredients:

1/4 cup COLAVITA Fruttato Extra Virgin Olive Oil, plus more to drizzle
1/2 cup finely diced red onion
1 clove garlic, minced
1 (15-ounce) can small white, or cannellini beans, drained
1/2 cup peeled, diced tomatoes (canned o.k.)
2 tablespoons fresh basil, sliced thin
1 - 2 tablespoons COLAVITA Balsamic Glace or Balsamic Vinegar, or as needed
Freshly shaved Parmesan cheese, as needed
Salt and freshly ground pepper, to taste
1 baguette (not sourdough)


Preparation:


1. Heat the oil in a small saute pan; add the onion, garlic, beans and tomato, cook until the tomatoes are just beginning to soften and all are heated through.  Stir in the basil along with salt and pepper, to taste.
2. Meanwhile, slice the baguette diagonally into 1/2 inch slices.  Lightly brush both sides with Fruttato; bake in a low, 325 degree oven, until crisp, 10 - 15 minutes.
3. When the bread is crisp, top with the bean mixture; drizzle with additional Fruttato and Balsamic Glace or Balsamic Vinegar. Top with a shaving of Parmesan cheese.  Serve warm or at room temperature.  Makes about 24 crostini.
