Piquillo - Black Olive Relish
This delicious relish was served on the Spanish-Style South African Gatsby as presented at the Culinary Institute of America's "World of Flavors" event where Colavita was proud to partner with the Mushroom council.
Origin: Steve Solomon, FSInsights and Micael Foley, Michael Foley Foods
Ingredients:

1 - 2 cups piquillo peppers, chopped
1/4 cup grilled red pepper, seeded and diced
1/4 cup grilled yellow pepper, seeded and diced
1/4 cup pitted black oil cured olives, chopped
4 tablespoon COLAVITA Extra Virgin Olive Oil
2 tablespoons chopped fresh parsley
2 tablespoons lemon juice
1 tablespoon COLAVITA Red Wine Vinegar
2 tablespoons honey
2 teaspoons chopped fresh garlic
2 teaspoons chopped fresh thyme
1 teaspoon crushed red pepper flakes


Preparation:


Combine all the ingredients together in a bowl; season to taste with salt and pepper.  Refrigerate 2 hours.  Bring to room temperature before serving.  Taste and adjust the acidity.
