Turkey Meatloaf with Roasted Tomato and Red Pepper Sauce
This tasty meatloaf uses lean ground turkey rather than beef, making it much lighter. Serve this with Roasted Tomato and Red Pepper Sauce. The sauce is delicious on it and also as a spread for sandwiches made with the leftovers.

2 pounds lean ground turkey 1 medium onion, chopped 1/3 cup sun-dried tomatoes, drained and chopped 1 medium carrot, grated or chopped fine 1/4 cup chopped parsley 2 large cloves garlic, minced (about 1 tablespoon) 1/2 cup Italian style seasoned bread crumbs, or as needed plus additional for top 2 large eggs, lightly beaten 1/3 cup ketchup 3 tablespoon Worcestershire sauce 1 tablespoon COLAVITA Extra Virgin Olive Oil Salt and freshly ground pepper, to taste
Place all the ingredients in a large bowl. Using your hands, mix together until well blended. Roll a small amount of the mixture into a ball; place in a small bowl and microwave for 45 seconds, or until cooked, taste adjust seasonings and add additional breadcrumbs if necessary. The ball should hold together when cut, but not be too dense. Once all the seasonings are correct, pat into a loaf shape in the center of a large baking dish, sprinkle the top with breadcrumbs and place into a 350 degree oven for 1 to 1 1/2 hours, or until cooked through. Allow to stand for 5 to 10 minutes before slicing.
