Chocolate Banana Muffins

Making these moist muffins with COLAVITA Extra Virgin Olive Oil and wheat germ make them not only tasty, but healthy.

Ingredients:

1 1/2 cups all-purpose flour
3/4 cup sugar
1 tablespoon baking powder
3/4 teaspoon salt
3/4 cup toasted wheat germ
1 tablespoon unsweetened chocolate
1 1/2 cups ripe banana, mashed (about 3)
1/2 cup milk
2 large eggs
1/3 cup COLAVITA Extra Virgin Olive Oil
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips


Preparation:


Preheat oven to 400 degrees F.  Line a standard 12 muffin cup pan with paper liners.  Sift the first 4 ingredients into a medium bowl.  Mix in the wheat germ and unsweetened chocolate.  Combine the mashed bananas, milk, eggs, oil and vanilla in a large bowl; whisk to blend.  Add the dry ingredients along with the chocolate chips, mix well.  Fill prepared muffin cups 3/4 full with prepared batter.  Bake until golden and tester inserted into the center comes out clean; about 25 minutes.
