| Sort of Greek Pasta Salad |

Ingredients:
1 pound farfalle (bowtie) pasta 1 pint grape or cherry tomatoes, halved 4 green onions, sliced 1 2.25 ounce can sliced black olives, drained 1 7 ounce can artichoke hearts, packed in water, drained and cut into 1/2 inch pieces 1/3 cup COLAVITA Extra Virgin Olive Oil 2 tablespoons COLAVITA Balsamic Vinegar juice of 1 lemon 1/2 teaspoon black pepper 1/4 cup fresh parsley, chopped 4 ounces crumbled feta cheese |
Preparation:
Cook pasta according to package directions. In a large bowl, combine the tomatoes, onions, olives and artichoke. In a small bowl, whisk together the olive oil, balsamic, lemon juice, pepper and parsley. When the pasta is done, drain and rinse with cold water to cool; drain well. Add the pasta to the vegetables; pour dressing over and toss to combine. Top with feta cheese and serve.
