Kale, Red Onion and Beef Pie

COLAVITA Extra Virgin Olive Oil Pie Crust

Ingredients:

1 bag pre-washed Kale
1 large red onion, thinly sliced
1/4 cup COLAVITA Extra Virgin Olive Oil
Salt and freshly ground pepper to taste
1 cup shredded or sliced cooked beef
1/2 cup shredded cheese, (your choice, try cheddar, Swiss or havarti.
1 egg, lightly beaten, for crust


Preparation:


Heat oil in a large skillet over a medium-low heat; add onions and kale, cover, allow kale to wilt.  Stir in salt and pepper; cook for about fifteen minutes, stirring occasionally.  Remove from heat; add cooked beef and cheese; mix well. Pour mixture into prepared pie shell, cover with a lattice top crust.  Brush crust with beaten egg and bake in a 350 degree F oven until crust is golden brown; about 45 minutes.
Allow to sit 5 - 10 minutes before cutting and serving. 4 - 6 servings
