A.M. Party Omelet

Frittata?  Quiche?  No, it's a party omelet!
You can serve this omelet hot, or at room temperature, making it perfect for a buffet.
Ingredients:

1/4 cup COLAVITA Extra Virgin Olive Oil
1 cup diced green pepper
1/2 cup diced onion
1/2 cup pimientos, sliced
6 eggs, beaten
1 cup half and half
1/4 teaspoon ground nutmeg
1/8 teaspoon cayenne pepper
Salt and freshly ground pepper, to taste
1/4 pound Swiss cheese, diced
6 ounces crab meat, checked for shells


Preparation:


1. Preheat oven to 350 degrees. 2. Heat 3 tablespoons olive oil in medium skillet; saute green pepper and onion, until tender, about 2 - 3 minutes. Fold in pimientos. 3. Using remaining olive oil. grease the sides and bottom of a 9 inch spring-form pan. 4. In medium bowl, combine eggs, half and half, seasonings, and cheese; fold in sauteed vegetable and crab. Pour into prepared pan. 5. Bake, uncovered, at 450 degrees for 10 minutes; then reduce heat to 350 degrees and bake 10 minutes more. Gently release sides of spring-form pan and slice. 6. Serve hot or at room temperature.
