1. Heat 1/4 cup olive oil in heavy skillet, add beef and brown. Transfer to a 3 quart baking dish. Pour brandy over beef and flame. Once flame is out, stir flour, salt and pepper into beef. Add wine. 2. Add remaining olive oil to skillet and brown onion. Pour browned onion mixture over beef. Add carrots, garlic and bouquet garni. 3. Cover with beef broth and cook in preheated 350 degree oven for 2 1/2 hours. 4. Add mushrooms and cook for 30 more minutes. Remove bouquet garni before serving.
