Colavita Gnocchi with Marinara Sauce
"A traditional Italian classic, Gnocchi can be served as a main meal or as a side dish to meat and fish and is delicious topped with this Marinara Sauce. This Marinara Sauce recipe has been provided by Lidia Matticchio Bastianich, acclaimed Italian chef and owner of New York's Felidia, Becco and Frico Bar and star of the Public Television Show and companion book Lidia's Italian Table."

Ingredients:

MARINARA SAUCE
1/4 cup COLAVITA Extra Virgin Olive Oil
8 cloves garlic, peeled and crushed
3 pounds fresh ripe plum tomatoes, peeled and seeded or 1 (35 ounce) can of peeled Italian tomatoes, seeded and lightly crushed, with their liquid
Salt, to taste
Crushed red pepper flakes,  to taste
10 fresh basil leaves, roughly torn
1 package COLAVITA Gnocchi


Preparation:


Prepare the Marinara Sauce:  In a medium-size, non-reactive saucepan, heat the olive oil over medium heat. Add the garlic and cook until lightly browned, about 2 minutes. Carefully add the tomatoes and their liquid. Bring to a boil and season lightly with salt and crushed red pepper. Reduce the heat to a simmer, breaking up the tomatoes with a whisk as they cook, until the sauce is chunky and thick, about 20 minutes. Stir in the basil about 5 minutes before the sauce is finished. Taste the sauce and add salt and pepper if necessary. Makes about 3 1/2 cups or about 6 servings
Cooks Note: When using fresh plum tomatoes, the Colavita Extra Virgin Olive Oil can be increased to 1/2 cup for optimal results.
Prepare the Gnocchi: In a large pot, bring 2 quarts of water to a rolling boil.  Add a large pinch of salt; add the gnocchi and cook about 3 to 4 minutes, or until they float to the surface.  Remove with a slotted spoon to a large warmed serving platter.  Top with marinara and serve.
