Grilled Swordfish with Citrus Salsa
Serves:4
"Whether you're indoors or out, grilling has become a year-round activity. Try this one in the dead of winter or on a rainy day on your indoor grill for a taste of sunshine."
Ingredients:

1 red grapefruit, peeled and sectioned
2 oranges, peeled and sectioned
2 limes, peeled and sectioned
1 lemon, peeled and sectioned
1 cup mixed bell pepper strips
1 medium red onion, finely diced
1 tablespoon chopped cilantro
1 tablespoon chopped mint
1 tablespoon Tequila
2 tablespoons COLAVITA Extra Virgin Olive Oil
4 (5 - ounce) swordfish steaks
1 tablespoon Johnny Ciao's Soulful Seafood (or 1/2 tablespoon cumin and 1/2 tablespoon turmeric)
Citrus slices and mint leaves to garnish, optional

Preparation:

To make the citrus salsa: Mix together the fruits, bell peppers, onion, cilantro, mint and tequila in a food processor or blender; process using on/off pulses just to finely chop; do not over process.

Preheat grill.

Brush swordfish with olive oil and season with Johnny Ciao Soulful Seafood. Arrange swordfish on grill and cook 3 minutes on each side or until swordfish just begins to flake. Spoon salsa over grilled fish. Garnish with citrus slices and mint leaves, if desired.
