Lemon-Lime Swordfish w/ Cilantro
Serve this fish kabob over some COLAVITA Orzo.
Ingredients:

1 1/2 pounds swordfish
1/2 cup COLAVITA Extra Virgin Olive Oil, divided
1/2 cup fresh lemon juice, divided
1/2 cup fresh lime juice, divided
1/4 cup finely chopped onion
1 1/2 teaspoons salt, divided
1/2 teaspoon freshly ground black pepper
1 teaspoon paprika
1 tablespoon finely chopped cilantro
 4 to 6 wooden skewers , soaked in water for 1/2 hour


Preparation:


1. Rinse the fish and pat dry. Cut into 1 inch cubes.
2. In a glass bowl, combine 1/4 cup oil, 1/4 cup lemon juice, 1/4 cup lime juice, the chopped onion, 1 teaspoon salt, the pepper and paprika.  Mix well. Toss the fish cubes in the mixture, then cover and refrigerate for 1 to 2 hours, turning cubes several times during marinating. Drain the fish and discard the marinade.
3. Divide the fish among 4 to 6 skewers and broil or grill for 10-15 minutes, or until browned and tender, turning frequently to evenly brown the fish.
4. Mix together the remaining oil, lemon and lime juices, salt and cilantro.  Spoon sauce over fish kabobs and serve. Makes 4 - 6 servings
