| Lamb Stew |

Ingredients:
2 tablespoons COLAVITA Extra Virgin Olive Oil 1 clove garlic, minced 2 pounds lamb shoulder or boneless lamb stew, cut into 1 inch cubes 1/2 teaspoon rosemary 1/2 teaspoon dried thyme Salt and freshly ground pepper to taste 2 cups water 1 cup beef stock 1 cup dry red wine 6 to 8 carrots, peeled and cut into chunks 4 small whole onions, peeled and quartered 4 ribs celery, cut into pieces 2 to 3 medium potatoes, cut into 1 inch pieces 2 tablespoons flour dissolved in 3 tablespoons water 2 tablespoons chopped fresh parsley

Preparation:
In a large Dutch oven, heat the oil and add the garlic; saute 1 minute; add the meat and brown on all sides. Add the rosemary, thyme, salt and pepper, water, beef stock, and red wine. Cover and simmer 45 minutes to 1 hour, stirring occasionally. Add the vegetables. Cover and cook 30 minutes longer, or until the meat and vegetables are tender. Add the flour and water mixture to thicken. Taste and adjust seasonings. Sprinkle with chopped parsley.
