Preparation:
Preheat the oven to 375 degrees. Whisk together the olive oil and flour in a sauce pan, saute for a few minutes. Slowly stir in the stock and milk; add the sherry or wine, pepper, a pinch of salt, and the nutmeg. Simmer until reduced by half. Add the cream and grated Parmesan and let the mixture thicken. Lightly oil a flameproof casserole. Lay the cooked broccoli or asparagus on the bottom of the casserole; add the turkey or chicken slices; pour the sauce over the top; sprinkle with paprika. Cook in the oven for 20 minutes, then place under the broiler to brown for 1 or 2 minutes.
