Beef and Onions Braised in Beer
Serves:6
This is delicious over COLAVITA Pappardelle Pasta.
Ingredients:

2 pounds beef, such as chuck steak, cut into short thin slices, fat removed
4 tablespoons flour, divided
2 tablespoons COLAVITA Extra Virgin Olive Oil
1 pound onions, thinly sliced
2 tablespoons unsalted butter
2 tablespoons COLAVITA White Wine Vinegar
12 ounces dark beer
1 cup beef stock
1/2 teaspoon dried thyme
2 bay leaves
Salt and freshly ground pepper, to taste
1 teaspoon dark brown sugar


Preparation:


Heat oven to 325 degrees F.  Sprinkle the beef slices with salt and pepper; dust with 2 tablespoons flour making sure all the pieces are covered.  In a large flameproof casserole or Dutch oven, heat the oil over medium-high heat.  Add the beef and onions, brown quickly.  Remove with a slotted spoon and set aside.

Reduce heat to medium. Add the butter to the pot along with the remaining flour.  Stir well to combine, continue to stir until the "roux" just starts to brown.  Add the vinegar, beer, beef stock and thyme, stirring constantly until the sauce is smooth and beginning to thicken.  Return the meat and onions to the pot along with the bay leaves, a pinch of salt and pepper.  Sprinkle the brown sugar over the top; cover and cook in the oven for 2 hours, or until very tender.
