Homestyle String Beans With White Sauce
The white sauce in this recipe is a terrific use of olive oil. Try the white sauce on vegetables, biscuits, and, yes, home cooked chicken fried steak (fried in olive oil, of course!). COLAVITA Extra Virgin Olive Oil can also be the base for a roux.
Ingredients:

2 tablespoons COLAVITA Extra Virgin Olive Oil
1 small onion, finely chopped
1/4 teaspoon nutmeg
1 tablespoon flour
1 cup low sodium chicken broth or vegetable broth
salt and pepper to taste
1 pound string beans, steamed


Preparation:


Saute onion in olive oil till slightly golden. Add nutmeg and flour, stir till smooth. Add broth and continue cooking for about 5 minutes, stirring constantly. Add salt and pepper to taste. Strain before serving over steamed green beans. Serves 4.
