Mussels and Shrimp with Penne
Origin: Italian
Ingredients:

1 tablespoon COLAVITA Extra Virgin Olive Oil
2 to 3 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
2 cups fresh tomatoes, seeded, peeled and chopped
4 tablespoons finely chopped parsley, divided
1 teaspoon dried basil, crumbled
1/4 cup clam juice
3/4 pound medium shrimp, peeled and deveined
1 pound fresh mussels, scrubbed, beards removed
1 tablespoon brandy, (optional)
1 teaspoon lemon zest
1 pound COLAVITA Penne Pasta, cooked according to package directions


Preparation:


Saute garlic and pepper flakes in olive oil, until garlic just begins to color, 2-3 minutes. Add tomatoes, 2 tablespoons parsley, basil and mint; bring to boil; lower heat, cover and simmer 10 minutes. Add clam juice, shrimp, mussels and brandy, (if using) cover and cook for 4 - 5 minutes or until shrimps are pink and mussels open. Carefully remove mussels from sauce.  Meanwhile, in a small bowl combine the remaining parsley with the lemon zest. Place the cooked pasta into a warm serving bowl, pour sauce over, stir to combine. Place mussels on top. Garnish with chopped parsley and lemon zest. Serves 4 - 6
