Lamb Shanks Giardiniera

Ingredients:

4 lamb shanks, about 1 pound each
1 teaspoon garlic powder, or more as needed
1 teaspoon minced rosemary, or more as desired
Salt and pepper
2 tablespoons COLAVITA Extra Virgin Olive Oil
1 large can (28-ounce) plum tomatoes, crushed
2 carrots,  diced
2 medium onions diced
3 leaves basil
1 can peas with their liquid
1/2 cup wine, red or white
8 ounces COLAVITA fettuccine, cooked according to package directions


Preparation:


Trim all fat from shanks, season with salt, pepper, garlic powder and rosemary leaves. Preheat olive oil in a heavy pan that will hold shanks comfortably. Brown shanks well on all sides. Add crushed tomatoes, onions, carrots and basil. Simmer for 3 hours, when shanks are tender, add wine and peas. Simmer for a few minutes. Serve lamb and sauce over fettuccine.
