| Osso Buco Milanese (Veal Shanks Milan Style) |

Slow braised veal shanks with the meat falling off the bone into a delicious sauce. For the perfect accompaniment serve with Risotto Milanese.

Ingredients:
6 veal shanks, (cut 2" thick) Salt and pepper 1/2 cup flour 1/3 cup COLAVITA Extra Virgin Olive Oil 1 medium onion, chopped fine 1 carrot, peeled and finely diced 1 stalk celery, diced fine 1 (28-ounce) can crushed tomatoes 1/2 cup dry white wine 2 cloves garlic, minced 2 tablespoons minced parsley Salt and freshly ground pepper, to taste

Preparation:
Season the veal with salt and pepper; sprinkle with flour. Heat olive oil over medium - high heat in a large pot or Dutch oven, add veal and brown on all sides; remove from pot. Reduce heat to medium; add onions, carrot and celery; saute until lightly brown. Return veal to pot, stir in tomatoes and wine. Cover pot and simmer over low heat or place in a 325 degree F oven for 1 1/2 hours until meat falls from bone. Add parsley and garlic, adjust seasonings. Arrange meat and sauce on warm platter, garnish with parsley, if desired.
