Ingredients:

1 large eggplant, unpeeled
1/2 cup COLAVITA Extra Virgin Olive Oil
1 green pepper, chopped
1 large onion, chopped
1 stalk celery, diced and parboiled
1 (8-ounce) can tomato sauce
1/2 cup pimento stuffed green olives, sliced
2 tablespoons COLAVITA Red Wine Vinegar
2 tablespoons capers, drained
1 tablespoon chopped parsley
1 tablespoon chopped oregano
1 tablespoon sugar
Salt and freshly ground pepper, to taste


Preparation:


Cut eggplants into small squares.  Fry in extra virgin olive oil, remove and set aside. In same oil, fry the pepper and onion. Combine all ingredients in frying pan. Simmer for 10 minutes. Add salt and pepper to taste.
