Baked Mussels
Origin: Italian
Ingredients:

3 dozen mussels
5 tablespoons COLAVITA Extra Virgin Olive Oil, divided, or as needed
Salt and freshly ground pepper
1/2 cup crushed tomatoes
Breadcrumb Stuffing:
2 cups bread crumbs
4 tablespoons grated Parmesan cheese
3 garlic cloves, finely minced
2 tablespoons parsley, finely  chopped


Preparation:


Scrub mussels with a brush, pull off beards. Prepare a frying pan with a tight fitting lid that will hold all the mussels. Add 3 tablespoons  olive oil, 1/3 cup water, salt and pepper. Cover pan, let mussels steam over medium heat to open. DO NOT USE UNOPENED MUSSELS. Remove mussels and open shells, leaving the mussel in one shell and discarding the second shell.  In a bowl, combine the bread crumbs, cheese and garlic, Mix well; spoon over each mussel. Top with about 1 teaspoon of crushed tomatoes;  sprinkle with chopped parsley. Drizzle with olive oil and remaining liquid from steam process to moisten the bread crumbs. Bake at 375 degrees F. until golden brown--about 15-20 minutes. Serve hot.
