Easy Pizza Rustica

Pizza Rustica is served traditionally on Easter Sunday in most Italian households.

Ingredients:

1 frozen or store bought pizza dough
1/2 cup cubed sweet or hot-dry sausage
1/2 cup cubed Genoa salami
1/2 cup cubed prosciutto
1/2 cup cubed mozzarella or provolone cheese
1/2 cup chopped hard boiled eggs (optional)
1 1/2 cups ricotta cheese
1/2 cup grated parmesan cheese
2 eggs mixed with water


Preparation:


Heat oven to 350 degrees. Cut pizza dough into two pieces, one bigger than the other.  Roll out the bigger piece and line bottom of a 9 inch baking pan.  The smaller piece will serve to cover the pizza.  Combine the rest of the ingredients in a bowl and mix until well blended.  Place mixture into the lined baking pan, roll remaining pizza dough to cover, seal dough, remove excess dough, make two or three openings on top with a sharp knife, brush top of pizza with egg wash.  Bake in 350 degree oven for about 1 hour or until the crust is browned and cooked through.
