Preparation:
1. In a large bowl, combine the yeast and lukewarm water; sprinkle 1 teaspoon sugar over the top and allow to set until bubbles form. Beat the eggs and sugar together; add to the yeast mixture and mix well. Add the anise extract, lemon and orange zest. Mix.
2. In another bowl, combine the flour with the raisin and salt. Add to the yeast mixture, mix to form a dough. Rub olive oil over the dough and set, covered, out of drafts, to rise. After 2 hours, punch the dough down and allow it to rise again. (Oil your hands so the dough doesn't stick to them.) After the second rise, divide the dough into four equal pieces; shape into loaves and place in oiled bread loaf pans. Let rise until doubled. Bake at 350 degrees F. for 10 minutes; loosely cover the pans with foil, reduce temperature to 300 degrees F. and bake 20 minutes longer. Makes about 32 slices.
