Easy Yet Amazing Bruschetta
Ingredients:

1/4 cup COLAVITA Extra Virgin Olive Oil
2 cloves fresh garlic, chopped fine, divided
1 basket (12 ounces) red pearl tomatoes, pear tomatoes, or cherry tomatoes, sliced in half
1/2 teaspoon honey
1/4 teaspoon lemon juice
Zest from 1/4 lemon
1 bunch fresh basil, torn
1/4 to 1/3 cup mozzarella cheese, shredded
Kosher salt and freshly ground pepper, to taste


Preparation:


1. Heat olive oil in a small saucepan over a low flame. When it is hot throw in half of the chopped garlic and let it sizzle for 5 seconds. 2. Add all the tomatoes to the oil. Toss to coat.  Turn off the heat immediately and remove the pan from the burner. 3. Pour the tomato/oil mixture into a large bowl. Add the rest of the garlic, honey, lemon juice and lemon zest. Stir. 4. When mixture is cool, add the basil and mozzarella cheese. Add salt and pepper to taste. Stir, and drizzle a little olive oil over the top. 5. Serve with pieces of toasted, french sourdough baguette. Serves 4 to 6
