Pronto Focaccia
"This recipe was adapted from a basic biscuit recipe. I make these a lot when making spaghetti as my family likes them better than garlic bread. I've even made them for a bridal shower brunch and they went over great."
Ingredients:

1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons COLAVITA Extra Virgin Olive Oil
1/2 cup milk
1/2 cup shredded sharp cheddar cheese
1 teaspoon finely chopped jalapenos
2 tablespoons bacon bits
 
TOPPINGS:
Italian Style:
1/2 teaspoon minced garlic (or pressed)
2 Roma tomatoes, chopped
1/2 cup finely chopped onion
2 tablespoons finely chopped Italian parsley
2 teaspoon COLAVITA Extra Virgin Olive Oil
Freshly grated parmesan cheese

For American Version:
2 Roma tomatoes, chopped
2 tablespoons bacon bits
1/2 cup shredded cheddar cheese


Preparation:


Make the bread: Mix all ingredients in bowl by hand. Turn onto floured surface and knead 5 to 6 times. Roll out to 1/2 inch. Cut out dough with 2 inch biscuit cutter and place on cookie sheet. Brush dough with olive oil.
Top with toppings: For Italian Version: Mix together the garlic, tomatoes, onion, parsley and olive oil. Spoon on top of bread, sprinkle with parmesan cheese.  For the American Version:  Top with tomatoes, cheese and bacon bits.
Bake: Place cookie sheet into a preheated 425 degree oven for 13 - 15 minutes.
