Olive Garden Ratatouille
Ingredients:

1/3 cup COLAVITA Extra Virgin Olive Oil, or as needed
6 garlic cloves, minced
1 large onion, peeled and finely chopped
1 fresh medium eggplant, peeled and cubed
3 small zucchini, sliced
6 ripe plum tomatoes, coarsely chopped
8 sun-dried tomatoes (packed in oil, drained and finely chopped)
2 green peppers, seeded, sliced into strips
3 tablespoons fresh parsley, chopped
3 tablespoons. fresh basil, chopped
Salt and pepper to taste
1/2 cup freshly grated Parmesan cheese


Preparation:


1. Heat olive oil in a large skillet. Add garlic and onions, saute 5 minutes. 2. Add eggplant and saute 6 to 8 minutes more. 3. Add remaining ingredients except cheese. Cover and simmer 15 to 20 minutes or until the vegetables are tender. 4. Add cheese, mix well and serve. Makes 6 - 8 servings
