Buttermilk Pecan Waffles
"A classic American Sunday morning treat, made better with Colavita Extra Virgin Olive Oil!"
Ingredients:

2 cups unbleached white flour
6 tablespoons powdered buttermilk
3 tablespoons sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
1 1/2 cups water
3 large eggs, lightly beaten
1/3 cup COLAVITA Extra Virgin Olive Oil
2/3 cup pecan pieces, toasted


Preparation:


1. Preheat electric waffle iron. In a large mixing bowl stir together dry ingredients (flour through nutmeg). 2. Add wet ingredients (water through olive oil) and beat until thoroughly mixed. Stir in pecans. (To keep pecans evenly distributed, stir batter before pouring each waffle.) Fill waffle iron 2/3 full, and bake according to manufacturer's directions. Makes 4 servings
